27- Gujia
Every year I wait for Holi festival desperately as I am fond of sweet snack Gujia .This year I was determined to learn recipe of Gujia from my dear friend Rachna who is expert in that . So after Holi festival I went to her home to learn Gujia recipe, She gave me every single detail of the recipe .she guided me properly even over the phone when I was making Gujia at home.
When I got success in making delicious Gujia, I was jumping with joy after tasting it ,as I achieved a great thing .She has always been a great support to me in every aspect either it is cooking or something else .
Here is the recipe.
Category - sweet snacks
Time - 1 hour 30 minutes.
Ingredients
- Khoya/ Mawa - 250 gm.
- Sugar powder. 2 table spoon
- Grated coconut - 1/2
- Chironji- 50 gm.
- Green cardamom crushed or powder- 6-7
- kishmish - 50 gm
Mix all ingredients well and parch it for 2 minutes on the low flame then keep it aside to get cool.
- Maida( refind flour-250 gm
- Refined oil -1 small bowl
How to Make -
Mix oil in maida and rub it gently and make a stiff dough with little milk . Cover it with a plate or muslin cloth and set aside for 10 minutes .then make small - small ball out of the dough. Roll out like puri and keep it on the Gujia maker and place stuffing on it , cover the lid of the Gujia maker a little tightly , open it and take gujia out gently of the gujia maker .
Heat cooking oil in a big pan and slide gently 5 - 6 gujia in the pan at a time . Fry it on the low flame till it turn golden brown .
Gujia is ready to serve.

Almost Two months back in the month of holy Ramzan I had a Ifftar at my brother,s Home where my Bhabhi Shiza Ali Zaidi cooked a delicious ,light and healthy snack for us . She served it with coconut chutney and it was soooo yummy .
A lights snack for those, who are calories cautious but love to enjoy delicious food.
Here is the recipe....
Category - snacks .

Time -20 minutes
Ingredients -
For snack
- Oats - 1 cup
- Corn flakes - 1 cup
- Rice -1 cup
- Finely chopped Onion -1 medium size
- Green chili- 2 (chopped)
- Tomato -1 small (Chopped)
- Salt- 1/5 tea spoon
- Cooking oil
- You can add other finely chopped vegetables like capsicum , french beans, carrot etc. as per your liking .
For Coconut Chutney
Grind these ingredients altogether in the mixer grinder with some water .
How to make snack .
Make powder of corn flakes, rice ,and oats in mixer grinder then make thick paste of it with some water. Add salt and finely chopped onion, green chili, and other vegetables. Mix it well and keep it aside for 15 minutes. Heat few drops of cooking oil on the non stick pan. Spread the mixture on the pan .Let it cook well on that side on the low flame then flip it like roti or chapati and cook it well till it turn golden brown from both sides.
Serve it hot with coconut chutney

- Black pepper(kali Mirch) powder - 2 pinch
How to cook

Wash mushroom and cut them into pieces Heat the cooking oil in the pan . Mix Ginger -Garlic Paste and parch it well as there should no smell of ginger - garlic .Add pieces of mushroom and stir it well ,sprinkle Black Pepper Powder - Salt - on the mushroom . Close the lid and cook it well on the low flame for few minutes . Adjust salt according to your taste. When it turn soft and well cooked , turn off the heat . Serve it hot.

24- Meethi Poori
Earlier I have published meethi roti recipe which you liked a lot , Now you enjoy the taste of Meethi poori from my mother's kitchen.
Its a good dry snack which you can carry while travelling .

- Sugar-1 cup
- Whole wheat flour-4 cup (full)
- Refined oil-2 table spoon
- Water-1- cup
- Salt-1/2 t.s
- Ajwain(trachyspermum ammi)-1/4 tea spoon
- Oil to fry
Make a solution of sugar, salt
in the above mentioned 1 cup of water.
knead the flour in prepared lukewarm solution .
Please remember dough should be soft enough to roll a roti

Heat the oil in the pan , make medium size balls out of the dough then roll a roti and fry it in the hot oil till it turns light brown.

Winter season is best to enjoy fried food. Now a days fresh spring onion is available in the market . There are number of dishes which we can cook with this green vegetable. One of the delicious dish is Hari pyaaz ke pakode (Spring onion fried snacks ). here is the recipe.......

Ingredients-
- Hari pyaaz( spring onion)- well washed and chopped)250 g.m
- Salt - 1/4 tea spoon
- Besan/ chick pea flour - 3 cup
- Zeera powder(roasted cumin seeds powder)- 1/4 tea spoon
- Red chili powder- 1/4 tea spoon
- Green chili - 2 (chopped)
- Cooking oil to fry
How to do -
Prepare a mixture of Chopped hari payaaz ,besan ,salt , red chili powder, chopped green chili with 1/2 cup of water. (Mixture should not be too thick or loose , It should be pourable.)
Heat the cooking oil in the pan. and drop spoon full of batter in 5-6 of batch. Fry it from both sides on the low flame till it turn golden brown.
Serve it hot with Hari chutney or Meethi chutney as per your liking.

- Green coriander leaves- 1/2 cup (well washed)
- Salt- 2 pinch
- Green chili- 2
- Lemon juice-1 tea spoon
How to make green chutney-
Grind coriander leaves with green chili and salt in the mixture grinder, add lemon juice, adjust salt according to your taste. chatpati hari chutney is prepared.

22- Ande ka Halwa
After Egg curry , here is another recipe of egg Ande ka Halwa for you .which is awesome in taste and quick to make.

- Cooking oil- 1 table spoon
Method
Crack eggs in the bowl, add sugar , beat them well for few minutes as it should be well mixed altogether. Heat the cooking oil in frying pan and pour the Egg liquid in the oil. keep stirring continuously as there should be no lump left. When it is well cooked and turn golden pink in colour , turn off the heat , take out Halwa in small bowls and serve it hot .

19- Meetha Dalia
Sweet Broken Wheat Porridge ( Meetha Dalia ) |
When ever I want to have some thing very delicious and light in my breakfast .... I prefer to have Dalia .It's a perfect start to begin my day.
When I plan to cook Dalia , I soak it in water over night . Then it takes hardly 5 min. to cook in the pan.
Category- breakfast / snacks
For 2-3 people
Cooking time 10-15 min.
Ingredients-
- Broken wheat (Dalia)- 4 table spoon (roasted and soaked in Water for at least 1/2 an hour.
- sugar -2 tbl spoon
- Milk -2 cup
Method -
Clean Dalia and roast it with out oil on the low flame .When it turn golden brown, add one cup of water and soak it at least for 1/2 an hour. Now bring it to one whistle in the pressure cooker on the low flame . Turn off the heat.When the lid open mix sugar and milk in dalia. Bring it to boil again and adjust sugar and milk according to your taste.
If you are adding jaggery .....then do not mix it along with milk , other wise milk will turn sour, add milk .... after the jaggery is melted with dalia.
Sweet Healthy breakfast is ready.

Ingredients for potatoes stuffing
- Potatoes - 1/2 k.g
- Green chili (chopped) -2
- Red chili powder-1/2 tea spoon
- Salt - 1/2 tea spoon
- Garam masal- 1/4 tea spoon
- Coriander leaves- 2 table spoon( chopped)
Mash boiled potatoes,add chopped green chili ,red chilipowder, salt,garam masala
and green chopped leaves of coriander leaves. Mix it all together and adjust salt according to your taste.
For Aloo Paratha |
Ingredients-
- Wheat flour -4 cups
- Salt- 1/4 tea spoon
- Cooking Oil to Apply
How to do -
Mix salt in wheat flour and make a dough, prepare small size of balls out of dough, take a ball of dough and spread it a little, put 2 spoon potato filling on the dough ball, cover it with another same size dough ball, close the edges, and roll slowly in the size of roti.
Put it on the tawa, Apply oil on both sides and cook it on the low flame till it becomes crispy and well cooked .

Mummy used to cook this peas snack in the season of winter when fresh peas are easily available in the market. I am very fond of this light and healthy shacks which has a great taste . I enjoy this snack along with plain bread slices and cup of tea. This snack takes hardly 10 minutes to cook . So if you are craving to have this healthy and tasty snack . here are the ingredients....

- Fresh green peas- 1/2 k.g
- Cooking oil- 1 tea spoon
- Salt - 1/4 spoon

Heat the cooking oil in the pan , add cumin seeds, salt black pepper in the pan , stir a little, and mix fresh green peas altogether. Now close the lid and cook it for few minutes(approx 5- 10 minutes) on the low flame when the water dries up and peas turn soft , adjust salt according to your taste. Stir a little and turn off the heat. Peas snack is ready to serve. Enjoy it piping hot with a cup of tea or coffee.....

the hot oil, spread it from all over sides.... keep the heat low..
and cook it on the low flame for a minute.... now flip it and cook

Today I am going to share a very special dish of green raw water chest- nut (singhada/ Singhara) with all of you. It is rare, unique dish which my mother used to cook in in the month of October-November when milky soft singhada starts coming in the market. This singadha dish you can enjoy as healthy breakfast or add on in your meal as a veg dish.
Just try this simple but unique delicious recipe of green fresh singhada...... surely, you would love it .

- Oil- 1 table spoon
- Cumin seeds( zeera)-1/4 tea spoon

Heat the cooking oil in the pan , add cumin seeds ,salt, red chili powder and mix sliced kaccha singhara in the oil .... stir 2-3 times, and add 2 table spoon of water. Poha is a dish which is very popular among Indians . I have learnt poha recipe from a friend and add on some more Ingredients to make it tastier and healthier.

For poha recipe you will be needing-
- Flattend rice-2 cup
- Onion (large)-2( chopped)
- kalonji- 1/2 tea spoon
- Turmeric powder-1/4 teaspoon
- Salt -1/4 tea spoon
- Refined oil- 2-3 table spoon
- Tomato(ripe) small-1( chopped)
- Green chili ( chopped)-4
- Peanuts -3 table spoon
Heat the cooking oil in the pan, fry chopped onion , add salt, kalounji, peanuts turmeric powder, finely chopped tomatoes, chopped green chili in the pan. Blend it all together and cook it at least2 minutes. add seasonal fresh vegetables like carrot, peas, beans etc. as per your liking.
Now put flatten rice in the sieve and wash it , let the water drain from the sieve put washed flatten rice in the pan with other ingredients .
Mix it well , if you see that poha has become dry , add 2-3 table spoon of water in the pan... stir a little, adjust salt as per your taste. Cover the lid and cook it on the low flame for two minutes then turn off the heat.
Light, healthy Indian snack is ready to serve.

Today I am going to give a treat to your taste buds of delicious chat pate chole. It goes very well with Poori or Bhatura and people love to have it with rice also.
When ever my mother cooked chole, she cooked it with out chole masala, and we used to enjoy it with meethi chutney).
I often miss that flavoursome taste of my mother's hand .
People - 4-6 people
Ingredients
- White chick peas (chole)- 2 cup
- Cooking oil- 2 table spoon
- Baking soda - 1 small pinch
- Onion - 2 (big size) chopped
- Green chili- 3
- Turmeric powder- 1/2 tea spoon
- Red chili powder- 1/4 tea spoon
- Coriander powder- 2 tea spoon ( full)
- Chole masala - 2 tea spoon (optional )
- Salt- 1/2 tea spoon
- Coriander leaves-1 table spoon
How to do-
Soak 2 cup of chole in 6 cup of water for 5-6 hours and boil it in the pressure cooker with some water (2 cup approx),1/4 tea spoon salt and a pinch of baking powder. Bring it to 5-6 whistle on the medium flame. Turn off the heat and let the pressure cooker open itself.
Chole should turn soft and well cooked, if it is so .....stir a little ... and start to prepare gravy for chole ...
Fry sliced onion in cooking oil till it turn little golden, add turmeric powder, red chili powder, Coriander powder,chopped tomatoes and green chili, salt , and chole masala (optinal). Mix it well altogether. Add some water and adjust the salt and boil it well again then turn off the heat,

After plain kala chana snack I am going to share chat pata , masaledaar kala chana snack with all of you. It is great in taste . I learnt this recipe from my darling Khala Munni Aunty . I remember ... when my mom was alive, Munni Aunty visited Bareilly,.... at that time she cooked this delicious snack for all of us .
Ingredients -
- kala chana- 250 g.m ( 1 glass) soak in water over night or 8-9 hours
- Salt - 1/2 tea spoon
- Baking soda -1 pinch
- Red chili powder -1/4 tea spoon
- Cooking Oil - 1-table spoon
- Onion -1 ( medium size) sliced
- Cumin seeds (Zeera) 2 full pinch
- Tamarind sauce(Imli chutney) - 1 tea spoon
how to make Imli chutney
- Coriander leaves/ mint-5- 6 leaves
- Cumin seeds -1/2 tea spoon
- Red chili powder-1/2 tea spoon
- Salt- 1/2 tea spoon
Put water soaked black gram with 1 glass of water in pressure cooker , add 1/4 tea spoon salt, a pinch of baking soda and bring it to 4-5 whistle on the medium flame then turn off the heat. When the lid open , check if kala chana is well cooked or need more whistle , if it is done. keep it aside , and start to prepare its baghaar.
Imli chutney gives very different and delicious flavour to this kala chana
To make sauce you need to grind imli pulp , mint or coriander leaves, cumin seeds, salt and red chili powder all together in thick consistency .
Bhaghaar / tadka for kala chana
Heat cooking oil in the frying pan, keep the flame low , add onion slices, cumin seeds , imli chutney , red chili powder, chopped green chili , and stir for a while . Mix this mixture with kala chana and adjust salt , and parch it well .

Fry chopped onion in hot oil, add turmeric, coriander and chili powder, salt, chopped tomato and green chili in the oil. Stir 2-3 times and mix 2 table spoon water in the gravy and cook it well.
When it turns into thick gravy, add grated paneer and mix it nicely with gravy, adjust salt , cook it well for few minutes.

Take a bread slice dip it in the water and squeeze gently with your palm ,put one full tea spoon of prepared potato mixture . Cover it ,and make a roll, and fry it in the hot oil till it turn golden brown.
Serve these crispy hot bread rolls Meethi chutney or Tomato sauce.

You need to prepare fresh thick curd for Dahi bada .blend the curd well, add black and white salt, rosted zeera powder and dip fried lentil balls in curd, garnish it with coriander leaves and chopped green chili.
To get best taste of Dahi Bada, Use fresh curd , It should not be sour.
Before Serving ,sprinkle some salt, zeera ,red chili powder on the dish and enjoy it with Meethi Chutney.

For Meethi Chutney/ Sauce-Time-30 mins.
How to make chutney
- Mango powder-2 tea spoon
- Sugar- 1 cup
- Water -3 cups
- Cumin seeds powder (Zeera) roasted- 1/2 tea spoon
- Salt-1/2 spoon-1/2 tea spoon
- Red chili powder- 1/2 tea spoon
- Dry ginger powder- 1/4 tea spoon
To make chutney put all the ingredients in 3 cups of water and leave it for 1/2 hour. Bring it to boil on the low flame, add sugar and stir continuously time to time other wise liquid will over flow. Boil it to reduce half in quantity. It should be thick, pourable, sticky and transparent in texture.

Method-
Meethi Chutney |
Make small balls of lentil paste and fry it in the hot oil on the low flame till it turn light brown.
In between heat 4-5 cups of water in another pan and put fried lentil balls in hot water to make it soft and spongy.
After 15-20 min. take the lentil balls out from water, press it gently with both palm to squeeze its water and drop it in the prepared curd.
Cooked Meethi Chutney |
you can store Dahi Bada and this chutney in fridge to have it any time.

At last we have got a sigh of relief from scorching heat of summer. Drops of rain, beautiful rainy season,romantic beautiful songs and Chane ki daal ke parathe/ roti with mangoes and kacche aam ki paki chutney .... what's a combination of celebrating well favoured rainy season! Chane ki daal ke paratha / roti can be a good option to cook something special on lovely rainy day. For that you will be needing.

Put soaked chane ki daal (split yellow peas), salt and other ingredients with 1/2 cup of water in the pressure cooker and bring it to 3 whistle on the medium flame. Now turn off the flame. Let the pressure cooker cool and open. if there is water.... parch it well. Grind it for filling the paratha.
For paratha
Mix salt and refined oil in wheat flour and make a dough . Make small size of ball out of the dough. Take a ball of dough... spread it a little, put one tea spoon filling on the dough ball... cover it with another same size ball of the dough... slowly roll the stuffed dough in the size of paratha. Put it on the hot tawa. Apply oil on both sides and cook it on the medium flame till it becomes crispy.If you want to have roti instead of paratha... bake it with out oil.
Enjoy it hot with ripe, sweet mango and cooked mango sauce.

When ever ,we all wanted to had some special breakfast ,Mummy served us meethi roti with salty butter and egg fry. That was the breakfast we always wanted to have ... happily. Even now my family jumps with joy when i say that 'I am going to cook meethi roti for breakfast.
so guys...try this recipe of Meethi Roti... you are going to fall in love with it.
For Meethi Roti you will need
- Sugar-1 cup
- Whole wheat flour-4 cup(full)
- Refined oil-2 table spoon
- Water-1 cup
- Salt-1/2 t.s
- Ajwain(trachyspermum ammi)-1/4 tea spoon
- Butter(salty)to apply on Indian bread (Roti)
Make a solution of sugar, salt in the above mentioned 1/2 cup of water.
with hard sweet dough ... it would be difficult for you to roll roti.
Make medium size balls out of the dough. Dough will be little sticky due to sugar so apply little more dry flour on the balls, then roll a roti.
In between heat the pan(tawa) on the medium flame. Put the meethi roti on -tawa. Cook it well on the low flame till the roti gets light pink .

From couple of days i was craving to have my favourite dish Chick pea flour bread & onion- tamarind sauce(Besan ki roti aur Pyaaz ki chutney). yesterday i had it in my dinner. & it was so delicious .
Generally we cook it on the 10th of Moharram to break
our all day long fast. Which we keep in the memory of Hazrat Imam Husain
who martyrdom on this day.
Right now also this mouth watering dish making my mouth wet again.

For this dish you will be needing...
For Besan ki Roti you will be needing-
Ingredients
- Gram flour(Besan)-5 table spoon
- Wheat flour (Atta)-2 table spoon
- Salt-1/4 tea spoon or as per your taste
- Refined oil- 1- tea spoon (optional)
- Pure ghee to apply on roti.
Method
Mix well gram flour,wheat flour,salt all together and make dough with water. you may add some refined oil while making a dough, it will make your roti soft. Make
medium size balls of besan dough & make the roti.In between put
the tawa on the medium flame.let it hot, put roti on the pan &
bake it from both side till it turn little pink. Apply pure ghee on
the roti.
- Tamarind(Imli)/mango powder-2 tea spoon
- Coriander leaves/ mint-5-6 leaves
- Cumin seeds -1/2 tea spoon
- Red chili powder-1/2 tea spoon
- Salt- 1/2 tea spoon
- Onion sliced-2 medium size
How to make chutney
To make sauce or chutney you need to grind imli paste , mint or coriander leaves, cumin seeds, salt & red chili powder all together. in thick consistency. like you can see in picture.
Now what you need to do is mix sliced onion with this sauce well. adjust the salt again. your tangy and mouth
watering sauce of onion( pyaaz ki chutney )is ready.
Serve hot roti with pyaaz ki chutney.

Start your day with this healthy breakfast......
- Chick Pea raw ( kala chana) -1 glass (soak in water)
- Salt-1/2 tea spoon
- Pinch of soda
- Tomato- (chopped)-1
- Lemon-1
- Green Chili(chopped)-4
- Cumin seeds(Zeera)-1/4 tea spoon
- Refined Oil-2 tea spoon
- Red Chili powder-1/4 tea spoon
How to do
Wash kala chana (black chick pea ) well and soak in 2 glass of water over night. do not drain water of kala chana. Boil chana with salt and a pinch of soda in the same water of soaked chic pea as that water contains extracts minerals of kala chana.
Bring it to 5-6 whistle in the pressure cooker on the medium flame. Now turn off the heat.. and wait for lid to open it self. when the lid open.. check it out if kala chana has turn soft. if it is so dry up the extra water of chana.
Baghaar/ tadka |
Tadka / bhaghaar for kala chana
In between heat 2 tea spoon refined oil in the pan, turn off the heat and add cumin seeds (zeera) and chili powder in oil, quickly pour out in the pressure cooker and mix it well with black chickpea.
Garnish it with chopped, onion, green chili, tomato, do not forget to add 3-4 drops of lemon over the black chic pea.
Enjoy mouth watering taste of chick pea (kala chana).
