Dahi Bada/Dahi Bhalla (Lentil Balls in Curd )

                                     

       

          Dahi Bada/Dahi Bhalla                     

The name of Dahi Bada is enough to bring water in my mouth.I just love it. If you are fond of chat pati  dishes ,this recipe of  dahi bada  is specially for you .This is soft, spongy, delicious north  Indian  lentils snack  which is very popular in north India.

Thick paste  of lentils for Dahi Bada
For 4 people
Time -30 min.

 For  Dahi Bada you will be needing -

Ingredients- 

For Dahi Bada
  • Black gram(urad daal)- skin less-1 glass/250 g.m
  • Mung Bean( skin less )--1 table spoon
  • Grated Coconut-2 table spoon (full)
  • Raisin(kishmish) 2- table spoon
  • Salt- 1/4 tea spoon
  • Baking soda- 2 pinch
  • Cooking of  dahi bada,   dahi bada in oil,  tla hua  dahi bada

  • Oil to fry

Method-

Soak Urad and Moong daal  in water over night, make  thick paste of it ,add salt, coconut powder, kishmish in lentil paste and mix it  well. Heat the oil in the  pan, drop  4- 5 spoon full lentil paste  in the hot oil  and  fry it on the low flame  till it turn light brown.

In  between  heat  4-5 cup of  water in another pan and put   fried lentil balls in hot water to make it soft and spongy.

After 15-20 min. take the lentil  balls out from  water, press it  gently with  both palm to squeeze its water and drop  it  in the  prepared curd.

For Curd/ yogurt/ Dahi  - 
  • Fresh Dahi -1/2 k.g (not sour)
  • Green chili- ) -2 chopped 
  • Black and White salt-1/4 t.spoon 
  • Red chilli powder  -to sprinkle
  • Heeng-2 pinch
  • Rosted zeera powder-1/4 tea spoon
  • Coriander leaves to garnish
 Dahi Bada/Dahi Bhalla    

You  need  to prepare  fresh thick curd  for Dahi Bada ,blend  the curd well, add  black and white salt, rosted zeera powder and dip fried lentil balls in curd, garnish it with coriander leaves  and chopped  green chili. 
Before Serving ,sprinkle some salt, zeera ,red chili powder on the dish and enjoy it with Meethi Chutney.


For Meethi Chutney/Sauce-

Time-30 mins.
  • Mango powder-2 tea spoon
  • Sugar- 1 cup
  • Water 3- cup 
  • Cumin seeds powder (Zeera) rosted- 1/2 tea spoon
  • Salt-1/2 spoon-1/2 tea spoon
  • Red chili powder- 1/2 tea spoon  
  •  sauces , chutneys
      Sout/Cooked Meethi Chutney
  • Dry ginger powder (sout)- 1/4 tea spoon
How to make chutney


To make chutney or  sout  put all the ingredients in  3 cup  of water  and  leave it for 1/2 hour.  
Bring it to boil on the low flame, add sugar  and  stir continuously  time to time other wise liquid will over flow. Boil it to  reduce  half in quantity. It  should be thick, pourable, sticky and transparent in  texture. 
Adjust  salt   and  sugar according to your taste. turn off the flame and  let it cool.
