sabudana pearl kheer (Sago Dessert)pearl tapioca








Now a days I am in Bareilly.... my home town, enjoying family's love ,work and food all together. Few days ago I tasted delicious dessert from Nahid siddiqi Aunty .... who is our neighbour, staying in front of our house at  khushboo Enclave . I always saw her smiling. she is very affectionate and kind human being .... ready to help every body. she has a passion for food and cooking is her favourite time pass .  
Today I will share her dessert recipe of  sabudana kheer with butterscotch flavour .... just simple and delicious  dessert.

Time- 20 minutes.

Ingredients-


  • Milk ( full cream) 1 ltr.
  • Sabudana(sago)- 1 bowl(Small)
  • Sugar - 3 serving spoon
  • Butter scotch ice cream -2 bowl


 Method-
Soak 1 cup of sadudana pearls in water for 1 hour , drain the water and rinse the sabudana pearls till the water runs clear of the starch.
Place the  thick bottom pan on the fire. cook boil sabudana pearls with full cream milk until they start floating on the top . Add 3 serving spoon of sugar and keep on stirring till it well cooked, swollen and semi transparent . Adjust sugar according to your taste and turn off the heat .
Let the sabudana kheer cool then mix butter scotch ice cream in it and keep it in the fridge for 1 hour.
Enjoy this cold dessert after the meal or any time you like.

 One of my favourite colour is green .It is the symbol of  nature  which is related to healthy life and  good health is related to healthy diet so lets enjoy some nutritious Hare -Bhare kabab (spinach,cheese and chana dal patties) with a cup of tea in the beautiful rainy season.
Here is the recipe :

Time- 30 to 45 minutes

Ingredients-
  • chana daal - 1 cup Boiled)
  • palak -250 gm ( blanched)
  • paneer - 1-cup grated
  • salt- 1/2 tea spoon 
  • Red chili powder - 1/4 tea spoon
  • Mango powder-2 pinch 
  • Chat masala -1/4 tea spoon
  • Bread - 5 pieces
  • Maida to cover patties
  • Green Chili-6(chopped)
  • chopped mint / coriander leaves-

How to cook 
Soak chana dal for 4-5 hours and  cook it with salt ,blanch spinach in hot water for few minutes and keep it aside to make it cool,grind both the ingredients and mix grated paneer,chat masala ,Red chili powder, bread pieces, Green Chili,chopped mint / coriander leaves altogether and adjust the salt according to your taste . Make patties out  of it and cover it with dry maida.
 Fry patties in hot cooking oil till it turn golden brown .


Enjoy  it hot with chutney or sauce.

In our life we meet  many  people, but only few makes a lasting impression, Aunty Safiya qasim (Kasim) is one of them ....  a very soft spoken, and gentle lady. I have great regards for her.Today's recipe is her recipe of vittu cake .... a very  popular sweet snack from south India. when I tasted this sweet snack first time, It gave me a taste of  muffin cake . Here is the recipe....

Ingredients -



  • Maida floor -1/2 k.g Maida
  • Suji (semolina)- 2 Serving Spoon
  • Eggs -5
  • Salt-1 full pinch
  • Baking powder-1/2 tea spoon
  • Sugar - 2 cups (powder)
  • Green cardamom (Green elaichi powder)-1/2 tea spoon 
Fried Muffins (Vittu Cake)


 How to do 
Beat the eggs with sugar powder to get a creamy texture. add Maida floor and other ingredients to make a smooth dough out of it . keep it aside for at least one hour. 
After one hour, make thick chapati out of dough and cut small size circles of it then make a light x mark in the centre of it.
Heat the cooking oil in the thick bottom deep pan and fry them on the low flame till it turn golden brown colour.

Last winter Daddy asked me to cook kali Gajar ka Halwa But At that time Black carrot was not available in the market so I could not make it . This winter when I saw it in the market, I bought it with out any delay. I have cooked and tasted this halwa  for the first time . It's  like melting in your mouth....Awesome flavour, Awesome taste.
Daddy liked it so much. he told me that my great Grand mother Mrs. Kaneez Haider used to serve him this Halwa during the exams due to its nutritious values and mood elevator taste.

 Ingredients-
 
  •  Black Carrot- 1 k.g
  •  Full cream Milk - 1 ltr.
  •  Sugar- 2 serving spoons.
  •  Fresh Malai or cream to Garnish
How to Cook -

Wash and Peel Black Carrot. Grate  and let it Boil and cook with milk .Stir it time to time or it will burn on the bottom of the pan. Parch it well .Its done . Enjoy it with fresh Malai or cream.

White Spongy Rasgulla (Safed Rasgulla)

May the festival of light brings cheer and happiness in all my readers life .Happy Diwali.
on the auspicious occasion of Diwali here is the recipe of spongy white Rasgulla for all of you. It's very very easy to make it at home with least time .

Ingredients 

  • Milk -1 ltr
  • Sugar-1 cup 
  • Vinegar / lemon juice-2 tea spoon 
  • White Ilayachi powder-1/2 tea spoon

How to Cook 

Curdle the boiling Milk with vinegar or lemon juice and filter it with sieve. Rinse It with cold water and keep it aside for few minutes . Now squeeze it and grind it in mixer grinder or you can kneed it with your hands to get the creamy texture .

Make sugar syrup with four cup water, one cup of sugar (you can add more sugar according to your taste.) and ilayachi powder.Boil it at least for ten minutes. Add carefully chenna /Paneer balls in boiling sugar syrup. and cook it on the  medium  flame for 10 minutes . Turn off the heat . Make it chilled in the fridge and enjoy Home made spongy white Rasgulla any time.
