Hare Bhare kabab (spinach, cheese and chana dal patties)



 One of my favourite colour is green .It is the symbol of  nature  which is related to healthy life and  good health is related to healthy diet so lets enjoy some nutritious Hare -Bhare kabab (spinach,cheese and chana dal patties) with a cup of tea in the beautiful rainy season.
Here is the recipe :

Time- 30 to 45 minutes

Ingredients-
  • chana daal - 1 cup Boiled)
  • palak -250 gm ( blanched)
  • paneer - 1-cup grated
  • salt- 1/2 tea spoon 
  • Red chili powder - 1/4 tea spoon
  • Mango powder-2 pinch 
  • Chat masala -1/4 tea spoon
  • Bread - 5 pieces
  • Maida to cover patties
  • Green Chili-6(chopped)
  • chopped mint / coriander leaves-

How to cook 
Soak chana dal for 4-5 hours and  cook it with salt ,blanch spinach in hot water for few minutes and keep it aside to make it cool,grind both the ingredients and mix grated paneer,chat masala ,Red chili powder, bread pieces, Green Chili,chopped mint / coriander leaves altogether and adjust the salt according to your taste . Make patties out  of it and cover it with dry maida.
 Fry patties in hot cooking oil till it turn golden brown .


Enjoy  it hot with chutney or sauce.

In our life we meet  many  people, but only few makes a lasting impression, Aunty Safiya qasim (Kasim) is one of them ....  a very soft spoken, and gentle lady. I have great regards for her.Today's recipe is her recipe of vittu cake .... a very  popular sweet snack from south India. when I tasted this sweet snack first time, It gave me a taste of  muffin cake . Here is the recipe....

Ingredients -



  • Maida floor -1/2 k.g Maida
  • Suji (semolina)- 2 Serving Spoon
  • Eggs -5
  • Salt-1 full pinch
  • Baking powder-1/2 tea spoon
  • Sugar - 2 cups (powder)
  • Green cardamom (Green elaichi powder)-1/2 tea spoon 
Fried Muffins (Vittu Cake)


 How to do 
Beat the eggs with sugar powder to get a creamy texture. add Maida floor and other ingredients to make a smooth dough out of it . keep it aside for at least one hour. 
After one hour, make thick chapati out of dough and cut small size circles of it then make a light x mark in the centre of it.
Heat the cooking oil in the thick bottom deep pan and fry them on the low flame till it turn golden brown colour.

Every year I wait for Holi festival desperately as I am fond of sweet snack Gujia .This year I was determined to learn recipe  of Gujia from my dear friend Rachna who is expert in that  . So after Holi festival I went to her home to learn Gujia recipe, She gave  me every single detail of the recipe .she guided me properly even over the phone
 when I was making Gujia at home.
When I got success in making delicious Gujia, I was jumping with joy  after  tasting it ,as I achieved a great thing .She has always been a great support to me in every aspect either it is cooking or something else .

Corn Flakes, Oats, Rice Snacks

Almost Two months back in the month of holy Ramzan I had a Ifftar at my brother,s Home where my Bhabhi Shiza Ali Zaidi cooked a delicious ,light and healthy snack for us . She served it with coconut chutney and it was soooo yummy . 









A lights snack for those, who are calories cautious  but love to enjoy delicious food. 

Here is the recipe....

Category - snacks .

People    -  2-3
Time     -20 minutes


Ingredients - 

For snack
  •  Oats - 1 cup 
  •  Corn flakes  - 1 cup 
  •  Rice - 1 cup 
  •  Finely chopped Onion -1 medium size 
  •  Green chili- 2 (chopped)
  •  Tomato -1 small  (Chopped)
  •  Salt- 1/5 tea spoon 
  •  Cooking oil 
    You can add other finely chopped vegetables like capsicum , french beans, carrot etc. as per your liking .



For Coconut Chutney


  • Coconut powder- 2 table spoon 
  • Green chili-1
  • Salt -1 pinch
  •  Roasted Chana - 1 table spoon
Grind these ingredients altogether in the mixer grinder with some water . 
How to  make snack .


Make powder of corn flakes rice ,and oats in mixer grinder then make  thick paste of it with some water. Add salt and finely chopped onion, green chili, and other vegetables. Mix it well and keep it aside for 15 minutes.

Heat few drops of cooking oil  on the  non stick pan. Spread the mixture on the pan .Let it cook well on that side on the low flame then flip it like roti or chapati and cook it well till it turn golden brown from both sides. 
Serve it  hot with coconut chutney

We all  know that  chickpea ( kala Chana) is very healthy for our health. It  is called power house of nutrients, as it is rich in proteins, fiber, carbs, vitamins & minerals. The best part is .... that it is very low in cholesterol... 
India is  the country  where ... the chick pea  production is  very high .There are several recipes  of black chick pea .I remember .....  Mummy  used to  serve  us kala chana (chickpea) dish in the break fast. One of the  tasty  and  healthy breakfast/Snack of  chick pea  is here   for you"From my Mother's kitchen".

Start your day  with this healthy breakfast...... 


here are the ingredients.....



  • Chick Pea raw ( kala chana) -1 glass (soak in water) 
  • Salt-1/2 tea spoon
  • Pinch of soda 
  • Tomato- (chopped)-1
  • Lemon-1
  • Green Chili(chopped)-4
  • Cumin seeds(Zeera)-1/4 tea spoon
  • Refined Oil-2 tea spoon
  • Red Chili powder-1/4 tea spoon
Wash kala chana (black chick pea ) well  and soak in  2 glass of water over night. do not drain water of kala chana. Boil chana with salt  and  a pinch of soda  in the same water  of soaked  chic pea as  that water contains  extracts minerals of kala chana.

  Bring it to  5-6 whistle  in the  pressure cooker  on the  medium flame. Now turn off the heat..  and  wait for  lid  to open it self.  when the lid open.. check it out if  kala chana has turn soft. if it is so.... dry up the extra water of chana.

In between heat 2 tea spoon refined oil in the pan, turn off the heat  and  add cumin seeds (zeera)  and  chili powder in oil, quickly pour out in the  pressure cooker  and  mix it well with black  chickpea.

Garnish it with chopped, onion, green chili, tomato,   do not forget  to add 3-4 drops of lemon over the   black chic pea.

Enjoy mouth watering  taste of chick pea (kala chana).

White Radish bread

Craving to  have  delicious paratha in the breakfast !  if some extra calories are nagging you then  Stop worrying!! Mooli Paratha can be a best option for you to satisfy your crave .
Radish can fills your tummy without giving you extra calories. White Radish (Mooli/Daikens) offers many healthy and  nutritional benefits.Iis rich in Folic Acid,Vitamin C,Zinc,B-complex vitamins & phosphorus.It is also very effective in Cancer fighting, Jaundice,Weight loss,Skin disorders, Kidney disorder,Fever,Bronchitis,Asthama,& many more.
         

Today, I am going to share a very simple & quick method  to cook Mooli Paratha. Many people make stuffed mooli paratha but my mother developed her own style... to make it more tastier & healthier. She used to knead dough with grated Radish(mooli) & Its own water extract (Lots of people generally squeeze out water from the grated radish so they loose all the vitamins & minerals of radish).

Ingredients -


  • White Radish(Mooli/Daikens)-medium size -2 (1/2k.g)
  • Salt- 1/2 t.s or as per your taste 
  • Coriander leaf (chopped)-1cup
  • Green Chilli (chopped)
  • Ajwaine(Trachyspermum ammi)-1/2 t.s

Method-


Peel  and Grate Radish.Add Salt, Ajwaine, Chopped coriander leaves and Green Chilli. Mix it well & keep it aside in a airtight jar for one hour as water will ooze out from the grated Radish.

Sieve the wheat flour,mix it with grated Radish  with its  exuded water  and  make a dough. 


Heat the tawa, Roll dough in the size of  Roti.  place  roti on the tawa .Apply oil/ghee on  both sides, bake it well from  till its gets crispy.
